The husks form first and the tomatillo grows inside. You know they're ready when the husk turns from green to tan, dries a bit and starts to open revealing the fruit. We've added it to bruschetta and salsa, and even quarted them, covered them in tempura batter and fried them. They taste almost like a granny smith apple and do not taste at all like a tomato. Three plants yielded a bushel basket full. Plant in full sun and give them lots of room. I think we might try the purple variety next year. You definitely need two plants for pollination.
