In summer, once the yellow flowers fade, the slender fruit emerge in the middle, and grow very fast. The young ones are tender and very sweet, great when stir-fried with oyster sauce.
I had only one ridge gourd plant in my back yard and I had so many gourds I cooked them every few days, gave some to my neighbors, and left some on the vines for seeds. These turned brown in fall and the skin became so hard I had to saw them open!!
