I let my cilantro bolt, because it's so beautiful and it smells fantastic when I water my garden. It adds character to my vegetable garden and seems to keep the pests away, while attracting pollinators..

Coriander seeds, when toasted, provide excellent flavor! Try them in cooking, or plant them to grow cilantro!
