Salad recipe

Here is the recipe that I promised to a few of you guys at the luncheon after the DBG sale. I decided to post it here instead of dmail so everyone can enjoy. I tripled the recipe and it was way too much. Double would have been perfect for the ten or so folks there.

Black Beans with Mango, Citrus & Jicama

1 30 oz can black beans
1 tsp. finely grated orange zest
1/4 c. fresh orange juice
1 tsp. finely grated lime zest
1/4 c. fresh lime juice
2 tsp. sugar
1 tsp. finely minced canned chipotle chile in adobo sauce, seeded
1 tsp. minced garlic
1/2 tsp. kosher salt
1/4 tsp. pepper
1 ripe mango, cut in 1/4 in. dice
1 c. jicama, cut in 1/4 in. dice
2 T. red onion, minced
1/4 c. fresh basil, finely sliced
3 T. olive oil

Rinse & drain beans well.

Make dressing.
Whisk orange zest & juice, lime zest & juice, sugar, chipotle, garlic, salt & pepper.

Toss with the beans.

Fold in mango, jicama, red onion, basil & olive oil.
