Virtual Holiday pot luck dinner?

My dinner for Mom and MIL and family was pork loin, sauerkraut, corn souffle, green bean casserole, bread, applesauce and jello. Easy to assemble and it bakes while picking up the moms and bringing to our house, no last minute chore like gravy making. I was so glad my MIL liked it -I was afraid with her dentures it would be annoying. You might get the pork loin for $2 a pound, whole , and let them cut into reasonable size roasts for the freezer. I sprinkled it with Omaha Steak seasoning and just baked to 180 degrees. If only I could be so inspired more often...
I'm bringing the Corn Souffle to our Virtual Pot Luck

Corn Souffle

Two eggs
3/4 cup sour cream
One can of corn-or omit if you don't want it so kernel-y
One can cream style corn
1 TB sugar
I box Jiffy corn muffin mix
One stick of butter- Sounds like a lot to me so I do it with half stick

Melt the butter in casserole. Mix all the other stuff, pour it into the casserole and bake at 350 for an hour.

Mom had ham this year, so I baked a pineapple cheese casserole. Super easy!

Prep time: 5 minutes
Cook time: 30 minutes
Servings: 8-10

2 lg cans pinaeapple chunks, well drained
2 C grated cheddar cheese
1 stick margarine or butter, melted
1 C sugar
3/4 C flour
1 sleeve ritz crackers

Put pineapple chunks in greased or sprayed casserole dish.
Mix sugar, flour, and cheese together and layer over pineapple chunks.
Crumble crackers on top and drizzle with butter.

Bake 30 minutes @ 350 degrees.

Corn Souffle that is a favorite for me! And pineapple cheese casserole, I'll have to try that. I'll go with the pork & sauerkraut as always.

Off topic but not really if we are sticking with New Years.
For prosperity in the New Year, put a $ bill under the door mat on New Years eve and bring it into the house on New Years Day.
