I know that Oregon Grapes are edible, but what does one do with them?

I'm assuming you are talking about Mahonia. I have no idea how to eat the berries, but I do love the look of the plant. I'd like to know the answer to your question also.
You can make jelly...
I'm pretty sure you're supposed to strain out the seeds and use the rest to make jelly. I was messing around with them last year and left the seeds in and... well... that was an interesting jelly. (Interesting as in-- inedible.)
This year I will probably try straining them and mixing them with another sweet berry for jelly.
Also, did you know you can eat the tender young leaves? They have a lemony flavor that is quite good, and I plan to add them to salad some time.
