First year. I have grown my strawberries in a poly tunnel as I live in very windy, salt driven region. Fruiting finished so I switched off irrigation 2 weeks ago. Plants have died back. I have cut them back and now await the Spring! But do I water these troughs say once a week or just leave them totally dry. I am scared of losing my plants.

Strawberries do not like a lot of moisture, but even in dry soil the roots will die. Check the soil moisture at a depth of about 5-10 cm, keep it slightly moist.
I think watering once a week is enough in your case.
Now is the time to apply fertilizer, this will help plant growth
