We have a self-pollinating, Meader Persimmon Tree planted 3 years ago. The tree looks very healthy and gets plenty of sun, but it only has one persimmon this year. Does anyone have experience growing this tree? Can we expect more persimmons in the future?

No experience specifically with Meader, but Persimmons can be kind of slow to come into bearing. As long as it looks healthy, I wouldn't worry. If you want lots, you might consider planting another one or getting a neighbor to do it -- most self-fertile plants do even better with a "special friend".
