I moved my Nepenthes into the greenhouse for winter about 2 weeks ago. It has now sent up a flower stalk. I thought they were supposed to flower in the spring :/ Is this going to be OK? Should I cut it off or just let it go?

If it is a healthy plant, flowing won't hurt it. It probably isn't that cold in Texas, and so it is probably growing. My plants grow through the winter. A bunch of the Nepenthes at the Botanical Garden are flowing right now. Do you havea boy or a girl? :)

The boys have a ball of pollon on the end of each flower. Chances are you have a boy. Most US plants are male.
I will have to look. I wonder why that is.
I think many of the plants in the US in the nursery trade are tissue cultures. Much more unusual to import from the source, and I think it was accidental that people originally brought in males. At the Botanical Gardens and at my house, every plant is male. :( I was going to post an ad. "Young, healthy male Nepenthes seeks female Nepenthes for companionship."
