Have a wonderful day!!
Happy Birthday Bec_No_Va
Thanks everyone - just came home, DH decided to take the day off so we could "hang out" - lunch at Ikea, a much needed massage and a little shopping - life is indeed good and I'm feeling a nap coming on :-)
Ummm a "nap" at 6PM?!?!? Did the massage wear you out? LOL
Shoot, I missed it! I had planned to start a thread early yesterday morning when I saw your name on the list but we had an "unexpected visitor" at 5:30 AM :( The flying squirrel Lucky brought inside was creating just a "little" chaos around here!!! I think I've finally learned my lesson - the bedroom window needs to be closed :( Sounds like you had a great day - Happy Belated Birthday!
Happy Belated Birthday!
A massage sounds wonderful!
Chantell - yes, as a matter of fact the massage wore me out :)
A flying squirrel?!?!?! OMG - that beats the snake any day ^_^
I didn't know we had flying squirrels around here!
Here's a little birthday present for you, Bec, for the days when you can't get to Ikea.
http://www.ikea-friends.com/corner/recipe-meatball.shtml
LOL - I love them meatballs! Of course Norwegians are born with the ability to make much better meatballs than the Swedes ^_^
They must be using a Norwegian recipe then, because I love them too. I have made that recipe and it's pretty darned good, even if I don't have the lingonberry sauce to go with them. I cheat and use the frozen unseasoned meatballs, though.
Happy Birthday Lady!!! Sounds like you had a nice day.
Happy Belated Birthday! Hope it was a good one...
I checked out the Ikea meatball recipe that hart posted - looks good, but all the measurements are metric LOL!!! terri
I swear I have never followed a recipe in my life - gimme a sorta kinda measurement & I'm good
1/2 lb ground beef
1/2 lb ground pork
# 1 egg
1 cup cream and water (or milk and water)
# 2.5 tbsp. finely-chopped onion
1/4 cup unsweetened rusk flour
# 2 cold boiled potatoes
# 4-5 tbsps butter, margarine or oil
# Salt and pepper
Ummmmm:
1) What is "rusk" flour...sorry I'm clueless
2) What do you do with these ingredients?
Rusk is breadcrumbs ^_^
Okey - to make meatballs
Instructions:
1. cook the onion till golden in a couple of tablespoons of lightly browned butter.
2. Mash the potatoes and moisten the rusk flour in a little water.
3. Mix all the ingredients until smooth consistency and flavor generously with salt, white pepper and (optional) a little finely crushed allspice.
4. Use a pair of spoons to shape the mixture into relatively large, round balls and transfer to a floured chopping board.
5. Fry them slowly in plenty of butter.
How to make the cream sauce:
Ingredients:
1/3 cup cream
2/3 cup beef stock
dash of soy sauce
1 tbsp white flour
Salt, white pepper to taste
Instructions:
1. Stir the boiling water or beef stock in a pan.
2. Add cream and thicken with white flour if preferred.
3. Season well with salt and pepper.
4. Serve the meatballs with the sauce, freshly boiled potatoes, uncooked lingonberry jam and salad. There you have the perfect Swedish meal!
Good morning Becky. Thanks for the recipe conversion! Terri
I didn't know we had flying squirrels around here!
I hadn't seen one in years! My cat used to leave them on the doorstep regularly when I lived in Maine but I never found one alive! This is the first one I've seen Lucky with and it was very much ALIVE! It was smaller than what I remembered so maybe it was a Southern Flying Squirrel - I never realized there was a difference: http://www.ngpc.state.ne.us/wildlife/flysqu.asp
Those meatballs sound yummy - have saved the recipe and will have to try them sometime!
Ohhhh that sounds positively yummy....not sure where one acquires uncooked lingonberry jam but the rest sounds do-able....thinking Sunday din-din
Edit to say...oppss didn't see the frying part...maybe a recipe for later then...do they have a low cal version? LOL

All things Lingonberry reside at IKEA!
Hmmm might have to take a stroll on over there....
Late as always, I am, but Happy Birthday!
Later and later!! Happy belated birthday, Bec!! Did you make that dish for your day?? I must give it a try. I always like perfect meatballs. Good to make for a party, etc.
