Helianthus Helianthus tuberosus I have a feral, white, Fuseau apparently, that I found in the woods near here. This variety gives off some odor when cooked, unless its been dried or partially dried first. The other varieties I have don't have any odor when cooking. It grows up to 12' tall with white, smooth carrot-like roots, easily cleaned. Cans very well plain like potatoes, pickles and relish. The flowers are too tough to eat, unlike my other varieties, but cook up smelling like squash. I made wine with them. Earthy, very full flavored, not fruity of course, just very different. A wine to get used to and maybe a good cooking wine. Very prolific, actually aggressive. Make sure you can keep them contained by regular mowing or they will spread! I have a white, knobby, Stampede and a red one very similar to Stampede. They grow to 5' and aren't as aggressive as the feral Fuseau. The flowers are tender enough to toss in salads. They smell like chocolate but taste like the roots. The flowers can be boiled or steamed and smell like squash.
