Will this consume my entire garden or turn into something I'll want to see. Quick! I found 3 in the garden yesterday munching away.

What plant were they eating on? Makes it much easier to ID.
Does it have any red markings on its back between the bases of the spines? Can't see them on the photo. If so, it would be the Mourning Cloak caterpillar.

One was on a Meyer lemon tree, the others were on the plastic tubes of my tomato wall of water towers, about to get in and munch. I don't think it had any red on its back but the "feet" had a rusty color.
At this stage, it is probably wandering and looking for a place to pupate. Or perhaps it has another instar or stage before that happens, and that's why you aren't remembering the red. Here is the caterpillar I think it is:
