Anyone work with clay outdoors?

Just curious - DH is fixing up the space behind our garage with a retaining wall (there's a slope behind), shelving, etc. He's already got the roof finished. It occurred to me I might be able to do some of my pottery work out there and we're discussing planning a space with a table, shelves, etc. It's not totally enclosed and is a bit breezy, but we can mitigate that.

I'm wondering if the outdoor temps, breeze, etc., would speed up drying too much? What do you all think?
