picking iris

If you pick iris, will they finish blooming out on the stalk?
Also if you just pick one flower and no stalk with it, how long will it last? or will it just wilt up over night?
I was thinking about picking single blooms and then displaying them in a toothpick holder or something similar?
How do you display iris the best?

Iris can open out on the stalk if kept in water--remove blossoms which fade. Single flowers son't last long, do better on the stalk.

I float a bloom sometimes, just because.

I have floated peonies.

I've floated broken off blossoms and refrigerated at night or if I go to work--sort of like a florist would and they've lasted a while.
