We got our first (and only for this year) nutmeg and mace. The tree is about 3 years old. You don't harvest the nuts but wait for them to drop. It seemed to hang on the branch forever. In April we will harvest our first cinnamon.
Anyone know how to process mace?

Congratulations on your first fruit. Here is what I found out.

To process mace, simply dry it and store it in a jar till it is needed in a recipe. To retain it's best qualities, don't grind it till you are ready to use it.
Mace is great in soups and sauces, in souffles and on fish.
