Our pitaya has formed these verticle, flaky, tan striations on it and I am not sure if it a fungus/disease/ or what. Any help in idetifying it would be awesome!

Mine has some of this also .
Dragon fruit gets a stem rot which is bacterial - Xanthomonas campestris. I don't know for sure what the cure is, or if there is one, but Agristrip (Streptomycin sulfate) or Agrimycin is used for fire blight, which is also bacterial. I have absolutely no idea if this will work in your case or not. I just can't seem to find much about the treatment for X campestris in dragon fruit.
It looks really bad in your plant, and I would consider tossing it and starting over...
Any chance this could be sunscald? Or cold wind damage?
