Herbs for Historic House

Lake Toxaway, NC(Zone 7a)

I am a volunteer at the oldest frame house in the mountains of NC. It has taken us years to restore it and open it for the public. We are now beginning to put in a few plants. Foundation plantings with shurbs were not used back then but we are putting in a few flowers down one side of the house. I need some herbs to go in with them. Almost any herbs will do except weird, far-out things from somewhere like Outer Mongolia.
I am hoping to receive these as donations, but I will have a few pieces of Bath's Pinks to trade and I also have a lot of cosmos seeds. I also have access to a lot of hostas, both all green and variegated but I don't the variety names.

As I am a new gardener, I can not help, but wanted to let you know, I think what you and the other volunteers are doing is fantastic. Julie
