Do beets get too old to use?

Danville, IN

When do beets get too old (woody) to cook and eat? I've got some left (in the ground) that were planted this spring. The tops are dying back, but the beetroots are firm. How do I tell if they are good to eat yet? I would like to use them to make pickled beets.
