Pumpkin leaves are odd light blue color

What could cause my plants to grow like this? I've got two varieties of pumpkin and the leaves are growing in a pale light blueish color, with very white stems. I had a bunch of squash planted before and their leaves got this way toward the end before I pulled them up.
Would this be related to the soil quality? What can I do to fix it? They looked fine when they first started growing. They're planted in some native clay (I'm in AZ in zone 9b) mixed with soil amender and have some mulch on top to keep moist in the heat. The ground was lightly fertilized with some 8-10-3 vegetable food early on, which has worked great with everything else.
Please look at the pics and let me know what you guys think. (I know they're a bit crowed in there, but soon the cantaloupe will come out and give them plenty of room.)
