I made 2 plantings of Kidney and Pinto Beans this year thinking I would let them dry on the vines and I would have dried beans all winter. Well the first planting started drying out in late June and I left them on the vine to dry. The pintos seemed to get some sort of disease that withered the beans in the pod. I harvested 1 batch of Kidneys and then some insect started getting into the pods and ruined most of them.
My second planting is now at the green stage just before they dry out. The kidney beans are pinkish in the pod and the pintos are pale but look like Pinto beans.
So, my questions are... do people eat them at this stage? I've tried them raw and they taste good and look like they would be good boiled or sauteed. Also, any tips on getting them to dry out properly? Should I pull the plants and take them into the barn?
