Good Fats

I'm trying to be better about cutting down on fats in my diet and substituting the better fats for the bad ones. Anyone out there have good ideas on how to do this? I'm using olive or cannoa oils for cooking as much as I can and trying to avoid fried or pre prepared foods altogether. I know we do need some fats in our diets, and some fats actually can be beneficial, but am not sure how to do this in the best way. One of my biggest problems is working around DH who isn't the least concerned with making changes and would prefer to have "good taste" as opposed to "good health". Anyone out there with some good, sneaky ideas? As long as it tastes good he won't mind what's in it.
