I planted some bell pepper plants. I am not AT ALL familiar with these vegetable plants.
The small pepper on the left is how the pepper on the right looked one week ago.
Is this a natural change of the pepper heading toward red, or am I losing the vegetable?

That pepper is turning red. It will be bright red in a week.
And yummy, too! Looks like you're off to a good start. I don't know what your summertime temperatures are, but if it sizzles in Frisco like it does here, your peppers will appreciate some shade. Otherwise, they get sunscald.

The family likes red better than green.
Is there a time period from "when they turn red" that I should pluck them? That is, if I wait too long ... will I have bad outcomes?

They will keep for awhile on the plant but then they wrinkle and rot - or dry up. I think it's best to use them soon after they have turned the color you like.
