I can usually wait for the first frost to be later than sooner, but more plants of mine are affected by a freeze.
When do you usually freeze your tubers?
Last year we went right to a low down and dirty freeze 10/15, the 2 years before we made it to 11/7.

And you dig up the tubers how long after?
You have a week to 2 weeks after they blacken to get them out.
