I got so many good answers for my questions. Of course those lead to other questions.
Do any of you make different piles with different things in them for different kinds of plants.
Someone said to keep the coffee etc for acid loving plants, which I have a lot of, but also have everything else you can imagine. If I like it, I find a place for it. I didn't know if it would hurt the other plants to use the same compost.
Also, when do you put cow manure in? While it's composting or right before you use it.

Definitely compost the cow manure, if only to get rid of the seeds of whatever the cow last ate.
I don't think there's much your coffee will hurt, unless you pour it directly on a plant, but I think it will do more good for an acid loving plant than it will as moisture for your compost. But, of course, if you live in an area that has very acidic soil, then you don't want to put it on plants either.
Its always a good thing to have a soil test kit or meter to test how your pH is doing.
