Bar top...Spar varnish, or Pour-on epoxy?...pros and cons?

Here is a bar made from reclaimed lumber. Hubby found it in a restaurants trash pile, and offered to take it off their hands.
I didn't like the color, so repainted it. Now I am stumped about what to do with the bar top.
Some suggest spar varnish, others say pour-on would be really cool.

I'd love the pour-on, but don't want it to yellow in the UV, since it will most likely receive a lot of it outdoors.

Spar varnish doesn't seem permanent, or as durable, but then again, I've never used either.
