Unless you want to try your hand at growing irises from seed, which can be both frustrating and fun (they don't germinate easily), your plant would be better off if you snapped the stalk off at the base so that it isn't wasting precious energy on seed production.

Irises don't grow true from seed, so don't leave the pod there to reseed itself. The seedlings will contaminate your clump if you are growing a named cultivar.
