Starting Seeds

I bought a Dianthus yesterday on clearance. Of course the flowers were dried and dead on it. Well, I was wondering, would it do any good to cut the heads off and save them for seeds? Or should I cut the entire plant down low? Should I discard these heads to wait for the last of the seasons? Will the Dianthus bloom again this season? I do not know how or when to save seeds from seed-bearing flowers but I am trying to learn as a go.
Sorry I am asking so much at once but I really want it all to work.

Are those the annual dianthus? I know the perennial(or biennial) ones will come back and flower again so I wouldn't worry about them. You could deadhead them and save the seeds I'm sure. Just let them fully dry on their own for a while after cut off then get the seeds.
