Thanks kathy_ann for reminding me to post this question about greens!!
I'm growing swiss chard and leaf beet for my greens this year, the swiss chard is lovely and sweet but the leaf beet leaves a dry chalky taste in my mouth. Anyone else with this taste problem??
Bitter Leaf Beet
I know exactly what you are describing...beet greens taste like that to me, too.
I just try cooking them in different ways sometimes. Rinse, then "stir fry" in olive oil with a bit of garlic, pinch of salt and pepper. It helps. (Sometimes I even throw in some crumbled feta cheese, yummy!)
You could also mix them with some of your other greens, too.
