i am going to stuff them with the pump from the ep's plus some chop meat, zucchini and top it off with some home made tomato sauce fresh from the garden.

i find all white eggplants to be a little milder than its black counterpart.

I find that the flesh is milder and sweeter, but the skin is tougher. I thoroughly enjoyed the one Frank gave me. I grilled one of these, a Black Beauty, and a Violetta de Firenzi for a tasty little comparison plate. The BB won, hands down, as the flesh and skin were both tender and tasty. The VdF was the toughest and most bitter. Last night I grilled a Beatrice, which was quite tasty (skinned).
