I know I should know being from Maine but I don't. Been eating new potatoes for awhile but as they get larger they have a brown center all else looks great skins too. Any ideas?

Most likely black heart, or altho there are similar conditions which more or result in a hollow potato.
Isn't that actually called "brown center?" I think it happens most in cool wet weather and is the result of too-fast growth of the tuber. Not sure how it's prevented, as I don't think it's a disease or anything.
