stucco look walls

I am thinking of doing a tuscan looking stucco (venetian plaster minus the shiney wax finish) sort of finish on the walls in the kitchen. Anybody done this? Pics? Comments? I'm mostly worried that the walls will never again be flat. I can't imagine it's reversable.
