Now in the depths of winter here in Canada, I open a jar of tomatoes I put up in August. The fragrance, the tang, the luscious flavour, this is why we spend a whole day (or more) in a hot kitchen with pots steaming and an endless task. I want to remember these moments of February joy when I'm tempted to say this summer... "Maybe I won't go to all that trouble this year."
