Carving for a novice

Lindsay, OK(Zone 7a)

After a long search of a saint Rosa De Lima I have given up. So I am am going to try to carve out my own Rosa De Lima.. 24 in tall by 12 wide or so with a full cape. I have a hunk of oak that is treated or a huge branch from a chokeberry... could I use one fo these for my garden saint? Is there a better wood to use for outdoor use? Or is there something better for me to make my wonderful little saint from? I am wanting Rosa de Lima seeing after some research my favorite nun did for me said she would be the best Saint for a Daylily grower, she will sit near my other saints made from stone and clay - I would use clay but I do not have a way to fire it - any ideas???
