What can I use to keep those caterpillars off the trumpet creeper but won't hurt hummingbirds?

Bacillus thuringiensis will take care of unwanted caterpillars but not harm other harmless critters.
Some products that contain Bt are... Biotrol, Dipel, Thurcide, Sok-Bt, and other various Green Light, Ortho, Ford's, Rigo, and Safer products. Check the label to make sure that the active ingredient is Bacillus thuringiensis, and read the directions. It may need to be reapplied if it rains soon after you apply. It also will affect the smaller caterpillars the most - which should be okay, because the larger ones will be mostly done with eating soon anyway.
If these are butterfly caterpillars, you may want to have them identified, and then maybe plant them an alternative food plant to eat if possible.
