End-of-the-month Soup

You know when you make veggies for dinner, there is always just a little bit left that no-one took? Hate to throw that away? I dump the veggies and any liquid into a freezer container, just keep layering as you get thru the month. When the container is full, make End-of-the-month Soup. Could be just veggie soup, or you could add chicken, ham, beef, or tofu, rice, noodles, potatoes, cheese....whatever.

I tend to just dump the frozen block into the crock pot, then dig thru the freezer to find any ham bones or the like to boil. If you thaw and run thru the food processor, it makes a great base for ham and bean soup.
