When I worked at Kroger one of the tricks in the deli was to keep the coffee fresh. We did this by placing copper pennies on the hot plate where the coffee pot sat. It would allow the coffee to stay hot but didn't give it the awful burned taste that it sometimes has after sitting for a while.
