hot pepper sauce

i have posted this recipe on the recipe forum a long time ago butr since this is a fairly new thread i thought i would put it up for the rest of my pepper and especially hot pepper fanatics

about 10 hot peppers (as many as you like) cut into a 1/4 inch small dice
1 red, yellor or orange sweet bell pepper cut in 1/4 inch strips
1/2 tsp kosher salt
16 turns on a pepper grinder
1 tbl red pepper flakes
1 tbl cayanne pepper
2 garlic cloves sliced thin

place all ingredients except the garlic in a large pot and pour enough vegetable oil in to cover by one inch.

bring to a boil then reduce heat to simmer and cook for five minutes more.

remove from heat and add the garlic and give it a good stir.

when cool put into a large jar and cover.

you can use it right away but it reaches it full potency after about 7 days. you do not have to put it in the fridge. i leave mine out on the counter.

wouldn't the addition of all the veggie oil cause it to fry instead of boil?

kerry - no problem just bring it to a boil and then reduce to simmer.
