Green Rhubarb

We just moved into a house with amazing rhubarb plants. I don't know much about harvesting rhubarb, but my mom mentioned she was surprised the stalks haven't turned red yet. Since she was surprised they're still green (and she's grown rhubarb before), I thought I'd ask you all. I did find some info on rhubarbs already on DG, but not answering this specific question. Thanks for any help you can give me!

Not all rhubarb has red stalks. Some rhubarb varieties have green stalks while others have green stalks with red specks. You can read all about rhubarb here. http://www.rhubarbinfo.com

Oh, thanks! I found other links to the rhubarbinfo website, but I hadn't found the info on the different stalk colors. My rhubarb appears to be a green-stalk variety, then, as far as I can tell from the pictures. Maybe I should also post a picture of mine... In that case, how do I know when to pick them? Can I use green-stalked rhubarb in the same recipes as I would red? Is there much of a difference?

Yes! You can definitely use the green rhubarb. Some folks claim it's sweeter than the red. I can't really tell the difference, myself.

Yes you can eat the rhubarb with green stalks. I don't taste a difference either.

Where can I get green rhubarb (Riverside Giant, Emerald, etc.)? Most seed companies only carry red varieties.
