Re-texturing help

Deer Park, TX(Zone 9a)

Looong story short. We took down our thiry year old panelling that had been glued/nailed to the walls. We didn't sand down some of the glue as close as we should have. (By the way we are newbies.) We have textured twice and in certain light (or when one lamp is off and another lamp is on) you can see it. When you look down the wall you can't see it. We were told to float it, but with our lack of experience we are afraid that will make things worse. If we don't do as suggested will it look worse after we paint it? Is there a way you can camouflage it when we paint? Any simple suggestion?
