plaster walls/wallboard ceiling

Our 1/2 bath ceiling was torn off looking for source of leak. Now we are ready to put new ceiling on. We have the rolls of insulation up and will now add the wallboard. On the edges where the wallboard meets the plaster (60 year old house)there is not a "fit" Very rough. I am using special concrete stuff to repair old plaster should I just seal in that area of difference to make them tight? I am going to put beadboard (from Lowes, not the $ stuff) on my ceiling rather then try to make it smooth/perfect for painting.
