Venison, the 'non-red' red meat that is healthy

We have dressed out 6 of 7deer this week. One on Monday, 5 on Wednesday, and one on Thursday. I gave away one yesterday evening and let them do the work. The guys were really nice and have been delivering them all field dressed. Shad is here to help this weekend and we're hoping for a couple before he leaves Sunday evening. I have one in the 'fridge to be ground up into 'burger. That is what we are doing to all of it this year.

Venison is almost if not totally cholesterol free. I am suprised that is not considered a red meat. It is the reddest non-red meat I have ever seen. I understand that none of the game meat is considered to be 'red meat'.
