When I was digging up some irises for trade, I found a couple of fat, nasty white/reddish caterpillars eating my rhizomes. These brutes were a good inch or better long and fat! What the heck are they and how can I get rid of them?

Well, if you weren't in GA I'd guess iris borers, but as far as I know, borers don't extend that far south. I suggest you take a couple of the buggers into your county extension service and see if they can identify them and tell you how to deal with them.
