I haven't tried this but it sounds yummy. We are getting SC peaches now so maybe I'll make a run this weekend.

Blushing Peach Jam

2 cups crushed peaches
2 cups red raspberries , crushed
1/4 cup lemon juice
7 cups granulated sugar
1 bottle liquid pectin
1 teaspoon almond extract

1. To peeled, pitted, and crushed peaches add 2 Tbs. lemon juice.

2. Let stand while preparing raspberries.

3. Crush raspberries and add remaining 2 T. lemon juice.

4. Combine peaches and raspberries with sugar in a heavy kettle.

5. Mix well and bring to a boil.

6. Boil hard for 1 minute.

7. Remove from heat and add pectin.

8. Stir well and skim off foam.

9. Add the almond extract and stir well again.

10. Pour into clean, hot, sterile jars.

11. Process in boiling water bath for 10 minutes at altitudes up to 1000 feet sea level. Adjust time for higher altitudes per your canning books.
