how to prune a Japanese maple ?

In general, there is nothing too special about pruning those. It's done with nearly the same knowledge, science and skill as most other trees.

A good quality pruning book should help.

Really, there is no reason to prune a Japanese Maple unless its branches are crossing or there is some other MAJOR problem.

The tree will look best (when mature) if you don't touch it other than to take care of crossing branches, etc.
