??? about stock plants

I got some fragrant stock plants from Powell Gardens a week or so ago. Some have stopped blooming because they have been in bloom in the conservatory for weeks already. If I totally dead head or cut them back, will they bloom again or are they just goners?

PLANT DESCRIPTION:

A great addition to the cutting garden, stock produces intensely scented flower spikes in delicate shades of pink, violet, and white. Although this European native performs best where summers are cool, it can be enjoyed in warmer climates as a cool-season annual. Place stock where its fragrance can be readily enjoyed; plant some in a container under a window, and let its delicious aroma float into your house.

GENERAL MAINTENANCE

Pinch young plants to encourage branching. Deadhead spent blooms to encourage flowering. Where not hardy, remove plants after frost.
