ISO: Tried & True Dehydrator Recipes

Well, I finally convinced DH to get me a food dehydrator, mostly by promising to make beef jerky for him. I made some today and used what came with the dehydrator, it's good but really salty and um...rather uninspiring.

Anyone have any fave dehydrator recipes they would like to share? Bonus points for good jerky recipes.
