I saw your post about skinning deer. We use the method you mentioned wanting to learn. With the deer hanging, we make the starting cut on the neck. We then use a sawzall to cut the limbs at the first joint (this eliminates the need to make the cuts in the hide at the legs). The deer is placed on a large piece of clean plastic. We don't hang it from a tree, we use a rope high on the neck, mounted to a hook attached low on the wall.

This method works really slick! Unless the carcass is frozen! The article mentions not to use this method if you plan to mount the deer, but I've had hides tanned after doing it this way without problems.
