With thanksgiving and Christmas on the horizon, it's time for those of use trying to lose weight and get fit to share our ideas and help keep these feast enjoyable but not fattening!
To start with, here's a recipe I've worked out for a low-fat mincemeat - the only fat in it is in the almonds.
Mandy's Low-Fat Mincemeat
250 g (1/2 lb) dried fruit salad (or dried apricots/prunes/dates)
350 g (12 oz) raisins
350 g sultanas (12 oz)
100g candied peel (3 oz)
50 g chopped, almonds (1 1/2 oz)
200g apples, peeld, cored (6 oz)
200g muscovado sugar (6 oz)
2 tsp mixed spice
1 lemon, grated rind and juice
150 ml (4 fl oz) brandy
Pass the apple, dried fruit and peel through a mincer.
Mix in the sugar, spice, brandy and lemon rind and juice.
Pack into clean jars, cover with greaseproof paper, tightly screw on the lids and store in a cool place. It will keep for several years.
Mincemeat evolved hundreds of years ago when the New World was first discovered - it contained meat and the dried fruit, sugar, spice and alcohol were an attempt to stop the meat rotting. Tastes have changed! Nowadays most recipes substitute fat for the meat but it isn't necessary.
