Moms cajun stuffed oysters

Brewers, KY(Zone 6b)

1 # country style sausage (hot or mild)
1/2 cup fresh chopped parsley
1/2 cup chopped green onions
1 pint of oysters, drained and chopped, reserve liquid
2 hamburger buns, dried in the oven and crumbled
1/2 block butter
juice of 1/2 fresh lemon
season bread crumbs

crumble sausage in pan and slow cook till it starts to fry. Add oysters, parsley and green onions, cook together 10 minutes. Mix bread, butter and lemon juice. If not moist enough add oyster juice.I like to use a little juice to give it that extra 'kick'. Blend well. Put in casserole dish** and top with bread crumbs. Bake 250* for 25 minutes.
**we are lucky enough to get fresh oysters by the sack. we clean several shells out and stuff the dressing in the shells and cook the stuffing on the shells. It is one of our favorite recipes for the holidays and special days.
