Jerusalem artichoke (Helianthus tuberosus) is an edible tubers, somewhat potatolike, but the carbohydrate present is inulin rather than starch and it is not utilized by the body for energy, as opposed to sugar.Because they cannot be absorbed by the body, they show indications of assisting in blood sugar control, can be recommended for diabetics and weight control , since they are filling.
A bit bland, can be eaten raw or cook in different ways. Some people may experience flatulence so it is important to introduce them slowly to the diet, until the intestine growth the intestinal flora necessary to digest them.
